Prepare honey syrup

If you don't have honey syrup ready, make it first: combine equal parts honey and hot water (for example 1/4 cup honey + 1/4 cup hot water). Stir until fully dissolved and let cool. Measure 0.5 oz for the recipe.

Muddle rosemary and mandarin

In a cocktail shaker, place the rosemary sprig and the freshly squeezed mandarin juice. Gently muddle together 6–8 times to release aromatic oils from the rosemary without shredding it. Avoid over-muddling which can make the drink bitter.

Build the cocktail

Add the bourbon (2 oz), honey syrup (0.5 oz), fresh lime juice (0.5 oz) and 2 dashes of Angostura bitters into the shaker with the muddled rosemary/mandarin.

Shake with ice

Fill the shaker with ice (about 1 cup / enough to nearly fill). Shake vigorously for 12–15 seconds until the outside of the shaker is cold and slightly frosty. This chills, dilutes and integrates the honey syrup.

Double-strain

Double-strain the cocktail into a chilled rocks glass over a large ice cube (or into a coupe if you prefer served up). Double-straining (using a Hawthorne and a fine mesh strainer) removes rosemary bits and any pulp for a clean texture.

Garnish and finish

Express the oils of a mandarin twist over the drink and rub the twist on the rim, or place a mandarin wheel on the glass. Add a fresh rosemary sprig as garnish; gently slap it between your palms first to release aromatics. Optionally, add one more dash of bitters on top for aroma.

Serve

Serve immediately while cold. Sip slowly to enjoy the interplay of sweet honey, citrus mandarin, herbal rosemary and warming bourbon.
