Pan-fried bacon

    Prepare

    Remove the bacon from the refrigerator and let sit 5 minutes while you gather equipment (large skillet or frying pan, tongs or fork, plate, paper towels). Pat the bacon lightly with paper towel if excessively wet. If using, add 1 teaspoon neutral oil to the cold skillet to help prevent sticking for very lean slices.

    Arrange and heat

    Lay the 3 bacon slices in a single layer in the cold skillet without overlapping. Place the skillet on the stove and turn the heat to medium.

    Cook

    Allow the bacon to cook slowly. After 4–5 minutes, use tongs to check the underside: it should be golden and beginning to crisp. Flip the slices and continue cooking 3–4 minutes more for chewy-to-medium crispness. For extra crispness, cook an additional 1–2 minutes, watching closely so it doesn't burn. Total cook time will be about 8–11 minutes depending on thickness and stove.

    If desired, grind a little black pepper across the bacon in the final minute of cooking.

    Drain and rest

    Transfer the cooked bacon to a plate lined with paper towels to absorb excess fat. Let rest 1–2 minutes; it will crisp slightly as it cools.

Oven method (alternative)

    Preheat the oven to 400°F (200°C). Line a baking sheet with foil and place a wire rack on top if you have one. Arrange the 3 bacon slices on the rack or directly on the foil without overlapping. Bake 12–18 minutes until desired crispness, checking at 10–12 minutes. Remove and drain on paper towels.
