    Wash and Cut the Potatoes

    Start by washing the Russet potatoes under cold running water to remove any dirt. After washing, peel the potatoes if desired, then cut them into thin strips (about 1/4 inch thick) to form fries.

    Soak the Cut Potatoes

    Place the cut potatoes in a bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch and results in crispier fries.

Frying

    Heat the Oil

    In a large heavy-bottomed pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer for accuracy.

    Dry the Potatoes

    After soaking, drain the potatoes and pat them dry with paper towels to remove any excess moisture.

    Fry the Potatoes

    Carefully add a handful of dried potato strips into the hot oil. Do not overcrowd the pot. Fry for about 4-5 minutes until they turn golden brown and crispy.

    Using a slotted spoon, remove the fries from the oil and place them on a plate lined with paper towels to drain excess oil.
