Preparation of Candy Base

    Combine Ingredients

    In a large saucepan, combine the granulated sugar, light corn syrup, and water. Stir well to dissolve the sugar.

    Heat Mixture

    Place the saucepan over medium heat and bring the mixture to a boil. Do not stir once it begins to boil.

    Add Butter

    Once boiling, add the unsalted butter and allow it to melt into the mixture. Continue boiling until it reaches the hard ball stage (about 250°F or 121°C).

    Remove from Heat

    Remove the saucepan from heat and stir in the vanilla extract and a pinch of salt.

Flavoring and Setting

    If desired, add food coloring to the hot candy mixture and stir until evenly distributed.

    If using, fold in chopped nuts or chocolate chips into the mixture quickly before it begins to set.
