Preparation

    Prepare the Nut Filling

    In a large mixing bowl, combine the chopped walnuts, chopped almonds, granulated sugar, and ground cinnamon. Mix well and set aside.

    Prepare the Phyllo Dough

    Thaw the phyllo pastry sheets according to package instructions. Preheat the oven to 350°F (175°C).

Assembly

    Layer the Phyllo

    Grease a 9x13 inch baking dish with some melted butter. Lay one sheet of phyllo dough in the dish and brush with melted butter. Repeat layering 8 sheets, brushing each with melted butter.

    Add Nut Filling

    Spread half of the nut filling evenly over the phyllo layers in the baking dish.

    Continue Layering

    Add 4 more sheets of phyllo dough, brushing each with melted butter. Then add the remaining nut filling and top it with another 8 sheets of phyllo, brushing each with butter.

Baking

    Cut and Bake

    Using a sharp knife, carefully cut the baklava into diamond or square shapes. Bake in the preheated oven for about 45-50 minutes or until golden brown.

Syrup Preparation

    Make the Syrup

    In a saucepan, combine water, granulated sugar, honey, vanilla extract, and lemon juice. Bring to a boil, then reduce heat and let it simmer for about 10 minutes.

    Cool Syrup

    Remove from heat and allow the syrup to cool slightly.

Finishing

    Drizzle Syrup

    Once the baklava is done baking, remove it from the oven and immediately pour the cooled syrup evenly over the hot baklava.

    Cool and Serve

    Allow the baklava to cool completely before serving. Cut along the previously made cuts and serve at room temperature.
