Cook the Pasta
Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente.

Prepare the Sauce
While the pasta is cooking, cut the pancetta into small pieces. In a bowl, whisk together the eggs, grated Parmesan cheese, and black pepper until well combined.

Cook Pancetta
In a large skillet over medium heat, add the pancetta. Cook until it becomes crispy and golden brown, about 5-7 minutes. Remove from heat and set aside.

Combine Ingredients
Once the spaghetti is cooked, reserve about 1 cup of pasta water and then drain the pasta. Immediately add the hot pasta to the skillet with the pancetta. Toss to combine.

Add Egg Mixture
Remove the skillet from the heat. Quickly pour the egg and cheese mixture over the spaghetti, tossing vigorously to combine. The residual heat from the pasta will cook the eggs gently, creating a creamy sauce. If the sauce is too thick, add reserved pasta water a little at a time until the desired consistency is reached.
Serving

Serve immediately with additional grated Parmesan cheese and freshly ground black pepper on top.
