Panna Cotta Base

    Prepare the Gelatin

    In a small bowl, sprinkle the gelatin over the cold water and let it bloom for about 5-10 minutes.

    Heat the Cream Mixture

    In a saucepan over medium heat, combine the heavy cream, whole milk, and granulated sugar. Stir until the sugar dissolves and the mixture is hot but not boiling.

    Add Gelatin

    Remove the saucepan from heat and stir in the bloomed gelatin and vanilla extract until fully dissolved.

    Pour into Molds

    Pour the mixture into serving cups or molds. Allow it to cool to room temperature.

    Chill

    Cover the cups with plastic wrap and refrigerate for at least 4 hours or until set.

Berry Topping

    Prepare the Berries

    In a medium bowl, combine the halved strawberries, blueberries, granulated sugar, and lemon juice. Toss gently to coat the berries.

    Let the Mixture Sit

    Allow the berry mixture to sit for about 15-20 minutes to macerate and release their juices.

Assembly and Serving

    Once the panna cotta is set, top each serving with the macerated berries before serving.
