Method

Meatballs

  1. 1

    Prepare the Meatball Mixture

In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, minced garlic, egg, Italian seasoning, salt, and black pepper. Mix until well combined.

  2. 2

    Form the Meatballs

Shape the mixture into small meatballs, about 1 inch in diameter. Place them on a baking sheet lined with parchment paper.

  3. 3

    Bake the Meatballs

Preheat the oven to 200°C (400°F). Bake the meatballs for 20-25 minutes or until cooked through and browned on the outside.

Hollandaise Sauce

  1. 4

    Prepare the Double Boiler

Set up a double boiler by placing a heatproof bowl over a pot of simmering water, ensuring the bowl doesn't touch the water.

  2. 5

    Whisk the Egg Yolks

In the bowl, whisk together the egg yolks, lemon juice, and salt until the mixture is pale and slightly thickened.

  3. 6

    Add the Butter

Slowly drizzle in the melted butter while whisking continuously until the sauce is thick and smooth. Add cayenne pepper for extra flavor.

Poaching Eggs and Assembling

  1. 7

    Poach the Eggs

Bring a pot of water to a gentle simmer. Crack each egg into a small bowl and gently slide into the water. Cook for about 3-4 minutes until the whites are set but yolks remain runny.

  2. 8

    Sauté Spinach

In a pan, lightly sauté the fresh spinach until wilted. This should take about 2-3 minutes. Season with salt and pepper to taste.

  3. 9

    Toast the Bread

While the spinach is cooking, toast the Italian bread slices until golden brown.

  4. 10

    Assemble the Bennies

On each slice of toasted Italian bread, place a spoonful of sautéed spinach followed by a meatball. Top with a poached egg and drizzle with hollandaise sauce. Serve immediately.
