Prepare the Meatball Mixture
In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, minced garlic, egg, Italian seasoning, salt, and black pepper. Mix until well combined.

Form the Meatballs
Shape the mixture into small meatballs, about 1 inch in diameter. Place them on a baking sheet lined with parchment paper.

Bake the Meatballs
Preheat the oven to 200°C (400°F). Bake the meatballs for 20-25 minutes or until cooked through and browned on the outside.

Set up a double boiler by placing a heatproof bowl over a pot of simmering water, ensuring the bowl doesn't touch the water.

Add the Butter
Slowly drizzle in the melted butter while whisking continuously until the sauce is thick and smooth. Add cayenne pepper for extra flavor.

Poach the Eggs
Bring a pot of water to a gentle simmer. Crack each egg into a small bowl and gently slide into the water. Cook for about 3-4 minutes until the whites are set but yolks remain runny.

Sauté Spinach
In a pan, lightly sauté the fresh spinach until wilted. This should take about 2-3 minutes. Season with salt and pepper to taste.

Toast the Bread
While the spinach is cooking, toast the Italian bread slices until golden brown.
