Method

Lamb Shank Preparation

    Sear the Lamb

    Heat olive oil in a large pot or Dutch oven over medium-high heat. Season lamb shanks with salt and black pepper, then sear them in the hot oil until browned on all sides, about 8-10 minutes. Remove the shanks and set aside.

    Sauté Vegetables

    In the same pot, add chopped onion, minced garlic, sliced carrots, and celery. Sauté until the vegetables are softened, about 5 minutes.

    Deglaze the Pot

    Pour in the red wine, scraping up any brown bits from the bottom of the pot. Allow the wine to simmer for about 3-4 minutes.

    Braising

    Return the lamb shanks to the pot. Add beef broth, rosemary, and bay leaves. Bring to a boil, then reduce heat to low, cover, and simmer for 2-3 hours, until the lamb is tender.

Roasted Vegetables Preparation

    Prepare Vegetables

    Preheat the oven to 400°F (200°C). Chop zucchini, bell pepper, and red onion into bite-sized pieces.

    Season and Roast

    In a bowl, toss the chopped vegetables with olive oil, salt, and black pepper. Spread them out on a baking sheet and roast for 20-25 minutes, until tender and slightly caramelized.

Mashed Potatoes Preparation

    Boil Potatoes

    Peel and chop potatoes into chunks. Place them in a pot of salted water, bring to a boil, and cook until fork-tender, about 15-20 minutes.

    Mash and Season

    Drain the potatoes and return them to the pot. Add butter, milk, salt, and black pepper. Mash until smooth and creamy.
