Main Ingredients

Method

Preparing the Marinade

  1. 1

    Mix the Marinade

In a small bowl, whisk together the olive oil, lemon juice, minced garlic, Dijon mustard, salt, black pepper, and chopped dill until well combined.

  2. 2

    Marinate the Salmon

Place the salmon fillets in a shallow dish and pour the marinade over them. Ensure each fillet is well coated. Cover and refrigerate for at least 30 minutes.

Preparing the Vegetables

  1. 3

    Prepare the Vegetables

While the salmon is marinating, prepare the vegetables. In a large bowl, combine the sliced zucchini, bell pepper, and trimmed asparagus. Drizzle with olive oil and sprinkle with salt and black pepper. Toss until the vegetables are well coated.

Grilling

  1. 4

    Preheat the Grill

Preheat your grill to medium-high heat (about 375°F to 400°F).

  2. 5

    Grill the Salmon

Remove the salmon from the marinade and place it on the grill. Grill for about 4-6 minutes on each side, or until the salmon is cooked through and flakes easily with a fork.

  3. 6

    Grill the Vegetables

While the salmon is grilling, place the prepared vegetables on the grill. Grill for about 8-10 minutes, turning occasionally, until they are tender and slightly charred.

Serving

  1. 7

    Plate the Dish

Once both the salmon and vegetables are grilled, remove them from the grill and let them rest for a couple of minutes. Serve the grilled salmon alongside the seasonal vegetables.
