Calamari Preparation

Clean the Calamari
Begin by cleaning the fresh calamari. Remove the head, innards, and cartilage. Rinse the calamari under cold water and cut it into rings (about 1/2 inch thick).

Prepare the Breading
In a bowl, mix the all-purpose flour, cornstarch, salt, black pepper, garlic powder, and cayenne pepper. In another bowl, whisk together the eggs and milk until well combined.

Bread the Calamari
Dip each calamari ring into the egg mixture, allowing excess to drip off, then dredge in the flour mixture, ensuring it is well-coated. Place the breaded calamari on a plate.

Fry the Calamari
In a deep skillet or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Fry the calamari in batches for about 2-3 minutes or until golden brown. Remove with a slotted spoon and place on paper towels to drain excess oil.

Make the Sauce
Add the crushed tomatoes, dried oregano, salt, and black pepper to the saucepan. Stir well and bring to a simmer. Cook for about 15-20 minutes, stirring occasionally. Add the chopped fresh basil just before serving.

Serve the fried calamari hot with the marinara sauce on the side for dipping.
