Preparing the Crispy Fingerling Potatoes

    Preheat the Oven

    Preheat your oven to 425°F (220°C).

    Prepare the Potatoes

    In a large bowl, mix the halved fingerling potatoes with olive oil, salt, black pepper, and chopped rosemary until evenly coated.

    Roast the Potatoes

    Spread the seasoned potatoes in a single layer on a baking sheet. Roast in the preheated oven for about 25-30 minutes, or until golden brown and crispy, flipping halfway through cooking.

Cooking the Eggs Florentine

    Sauté the Vegetables

    In a large skillet over medium heat, add a little olive oil. Once hot, add the minced garlic and sliced mushrooms. Sauté for about 3-4 minutes until the mushrooms are tender.

    Add Spinach

    Add the chopped spinach to the skillet and cook for an additional 2-3 minutes until wilted. Season with salt and pepper to taste.

    Cook the Eggs

    In a separate pot, bring water to a gentle simmer. Crack the eggs into the simmering water and poach for about 3-4 minutes, or until the whites are set but the yolks remain runny.

    Assemble the Dish

    On a plate, layer the sautéed spinach and mushroom mixture. Carefully place the poached eggs on top and sprinkle with shredded mozzarella cheese. If desired, you can place the assembled dish under a broiler for 1-2 minutes to melt the cheese.
