Preparation

    Prepare the Eggplant

    Slice the eggplant into 1/2 inch thick rounds. Sprinkle both sides with salt and let sit for 15 minutes to draw out moisture. Rinse and pat dry.

    Grill the Eggplant

    Heat a grill pan or outdoor grill over medium-high heat. Brush both sides of the eggplant slices with olive oil. Grill for about 4-5 minutes on each side until tender and grill marks appear. Season with black pepper.

    Assemble the Panino

    On one slice of bread, layer grilled eggplant, fresh mozzarella slices, baby spinach, and pickled roasted peppers. Drizzle balsamic dressing over the top.

    Complete the Sandwich

    Top with the second slice of bread. Optionally, brush the outside of the sandwich with a little olive oil.

Grilling

    Grill the Panino

    Heat a panini press or skillet over medium heat. Place the assembled sandwich in the press or skillet. Grill for about 3-4 minutes on each side, or until the bread is golden and crispy, and the mozzarella is melted.

    Serve

    Remove from heat, slice in half, and serve warm. Enjoy your delicious Eggplant Panino!
