Season the Chicken

In a large bowl, season the chicken thighs with salt, black pepper, garlic powder, and paprika. Make sure to rub the seasoning under the skin and all over the chicken for maximum flavor.

Marinate

Cover the seasoned chicken with plastic wrap and let it marinate in the refrigerator for at least 30 minutes or up to 2 hours for better flavor.

Prepare Breading Stations

Set up a breading station with three shallow plates: one with flour, one with beaten eggs and buttermilk mixed together, and the last with breadcrumbs.

Bread the Chicken

Take each marinated chicken thigh, dredge it in the flour first, shaking off excess, then dip it into the egg mixture, and finally coat it in breadcrumbs. Press the breadcrumbs onto the chicken to ensure they stick.

Heat the Oil

In a large, deep skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches about 350°F (175°C). You can test if the oil is ready by dropping a small piece of bread into it; it should sizzle immediately.

Carefully place the breaded chicken thighs into the hot oil, skin-side down. Fry in batches if necessary to avoid overcrowding. Cook for about 7-8 minutes on each side or until the chicken is golden brown and cooked through (internal temperature should reach 165°F or 74°C).
