Citrus Dressing Preparation

Combine Ingredients
In a small bowl, whisk together olive oil, fresh lemon juice, honey, salt, and black pepper until well combined.
Sandwich Assembly

Prepare Grilled Chicken
If not pre-cooked, grill the chicken breasts until they are fully cooked (internal temperature of 165°F or 75°C). Let them rest for a few minutes and then slice them.

Slice Tomato
While the bacon is cooking, slice the medium tomato into thin rounds.

Make Pesto Mayo
In a small bowl, mix together the pesto sauce and mayonnaise until smooth and well combined.

Assemble Panino
Spread the pesto mayo on one side of each slice of ciabatta bread. Layer the grilled chicken, bacon, sliced tomato, and field greens on one slice. Top with the other slice of bread, mayo side down.

Grill the Panino
Heat a panini press or skillet over medium heat. Grill the sandwich until the bread is golden brown and crispy, and the ingredients are heated through, about 3-5 minutes.

Dress the Greens
Before serving, drizzle the citrus dressing over the field greens that you used in the sandwich.

Cut the panino in half and serve with the dressed field greens on the side.
