Method
Preparing Calamari
Clean and Cut Calamari
Rinse the calamari under cold water. Remove the head and innards, and slice the body into 1/2-inch rings.
Prepare the Breading
In a bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and paprika. Mix well.
Make the Batter
Gradually add ice water to the dry mixture, whisking until smooth. The batter should be thick enough to coat the calamari.
Frying Calamari
Heat the Oil
In a large, deep pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
Coat the Calamari
Dip the calamari rings into the batter, allowing excess to drip off.
Fry the Calamari
Carefully place the coated calamari rings into the hot oil in batches. Fry for 2-3 minutes or until golden brown. Remove and drain on paper towels.
Making Pomodoro Sauce
Add Tomatoes
Stir in the canned crushed tomatoes, salt, and sugar. Simmer for about 10 minutes until slightly thickened.
Finish the Sauce
Add the fresh basil, stir well, and remove from heat.
Serving
Plate the Dish
Serve the fried calamari hot, garnished with lemon wedges and cherry peppers. Drizzle with pomodoro sauce or serve on the side.
