Crust Preparation

Make the Pie Crust
In a large mixing bowl, combine the all-purpose flour and salt. Add the chilled, cubed butter and mix with a pastry cutter or your fingers until the mixture resembles coarse crumbs.

Add Ice Water
Gradually add the ice water, one tablespoon at a time, mixing until the dough comes together. Form the dough into a ball, wrap in plastic wrap, and refrigerate for at least 30 minutes.

Mix with Cheese and Meat
In a large bowl, combine the sautéed garlic and spice mixture with the shredded mozzarella cheese and crumbled bacon or sausage. Stir until well combined.

Assembly and Baking

Assemble the Pie
Roll out the chilled dough on a floured surface to fit a 9-inch pie dish. Place the dough in the dish and pour the filling mixture into the crust, spreading it evenly.

Bake in the preheated oven for 30-35 minutes, or until the filling is set and the crust is golden brown. Let it cool for 10 minutes.
Hollandaise Sauce Preparation

Make the Hollandaise Sauce
In a double boiler or a heatproof bowl over simmering water, whisk together the egg yolks and lemon juice until pale and thickened.

Add Butter
Slowly drizzle in the melted butter while continuously whisking until the sauce is smooth and thick. Season with salt and a pinch of cayenne pepper.

Slice the pie into wedges, drizzle with hollandaise sauce, and serve warm.
