Prepare Roasted Garlic Aioli
Preheat the oven to 400°F (200°C). Cut the top off the head of garlic, drizzle with a little olive oil, wrap in foil, and roast for 30-35 minutes. Once cool, squeeze the roasted garlic into a bowl, add mayonnaise, and mix well. Season with salt and pepper to taste.

Cook the Steak
Season the ribeye steak with salt and black pepper. Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Cook the steak for about 4-5 minutes per side for medium-rare, or until desired doneness. Remove from heat and let rest for 5 minutes before slicing thinly.

Sauté the Mushrooms and Greens
In the same skillet, add another tablespoon of olive oil. Sauté the mixed mushrooms until browned (about 5-7 minutes). Add the fresh spinach or kale and cook until wilted (about 2-3 minutes). Season with salt and pepper.

Assemble the Sandwich
Slice the baguette or ciabatta in half. Spread the roasted garlic aioli on both sides. Layer the sliced steak, sautéed mushrooms, wilted greens, and provolone cheese. Close the sandwich and press down gently.

Cut the sandwich in half and serve immediately with plain or truffle fries on the side.
