    Prepare the Ragu

    In a large pot, heat olive oil over medium heat. Add chopped onion, carrot, and celery. Cook until softened, about 5-7 minutes.

    Add Meat

    Add ground veal, pork, and beef to the pot. Cook until browned, breaking up the meat with a spoon, about 8-10 minutes.

    Incorporate Garlic and Wine

    Stir in minced garlic and cook for 1 minute. Pour in red wine and simmer until reduced by half, about 3-5 minutes.

    Add Tomatoes

    Add crushed tomatoes, salt, and pepper. Bring to a gentle simmer, then reduce heat to low and cover. Let it cook for at least 45 minutes, stirring occasionally.

    Cook the Pasta

    While the ragu simmers, cook lumache pasta according to package instructions until al dente. Drain and set aside.

    Combine and Serve

    Once the ragu is done, stir in the fresh basil and parsley. Serve the sauce over the lumache pasta, topped with grated Parmesan cheese.
