Prepare the Miso Aioli
In a small bowl, mix together the miso paste and mayonnaise until well combined. Set aside.

Cure the Egg Yolks
In a small bowl, gently place the egg yolks and cover them with a layer of salt. Let them cure in the refrigerator for at least 1 hour.

Prepare the Beef Tartare
Finely chop the prime beef tenderloin and place it in a bowl. Add the koji vinegar, black shallot, and season with salt and black pepper. Mix gently until all ingredients are combined.

Prepare the Toast
Toast the slices of bread until golden brown. You can use a toaster or a pan for this step.

Assemble the Dish
On each piece of toast, place a generous amount of the beef tartare mixture. Top with a small dollop of miso aioli, a cured egg yolk, and a handful of watercress.
