Method

Preparation

    Prepare the Cauliflower Veloute

    In a saucepan, combine cauliflower florets and vegetable broth. Bring to a boil and then reduce heat to simmer until tender (about 10 minutes). Blend until smooth. Stir in heavy cream, salt, and white pepper. Keep warm.

    Make the Chutney

    In a skillet, heat olive oil and sauté chopped Jimmy Nardello peppers until soft. Add golden raisins, red wine vinegar, and salt. Cook until the mixture thickens slightly. Set aside.

    Toast the Pine Nuts

    In a small pan, melt butter over medium heat. Add pine nuts and cook, stirring frequently, until golden brown. Remove from heat.

    Cook the Bulgur Wheat and Romanesco

    In a pot, bring water to a boil. Add salt, bulgur wheat, and romanesco florets. Cook until bulgur is tender and romanesco is bright green (about 12 minutes). Drain any excess water.

Cooking the Scallops

    Sear the Scallops

    Pat scallops dry and season with salt and black pepper. In a skillet over medium-high heat, add olive oil. Once hot, add scallops and sear for about 2-3 minutes on each side until golden brown and cooked through.

Assembly

    Plate the Dish

    On each plate, create a pool of cauliflower veloute. Arrange the seared scallops on top, followed by a spoonful of chutney. Sprinkle with brown butter pine nuts and serve alongside the bulgur wheat and romanesco.
