    Prepare the Base

    In a large pot, melt the butter over medium heat. Add the chopped onion, celery, and carrot. Sauté for about 5-7 minutes until softened. Add the minced garlic and cook for an additional minute.

    Add Flavor

    Stir in the tomato paste and cook for another 2 minutes. Pour in the dry white wine and allow it to simmer for about 5 minutes, letting the alcohol evaporate.

    Combine Ingredients

    Add the fish stock, salt, and black pepper. Bring the mixture to a boil, then reduce the heat and let it simmer for 15-20 minutes.

    Blend the Soup

    Using an immersion blender, carefully puree the soup until smooth. If using a regular blender, allow the soup to cool slightly before blending in batches.

    Finish with Cream and Lobster

    Stir in the heavy cream and lobster meat. Allow the bisque to heat through for about 5 minutes. Adjust seasoning with salt and pepper to taste.

    Ladle the bisque into bowls, drizzle with tarragon oil, and serve with slices of fried bread on the side.
