    Roast the Bones

    Preheat your oven to 400°F (200°C). Place the beef bones on a roasting pan and roast in the oven for about 30-40 minutes, or until they are browned.

    Prepare the Vegetables

    Chop the onion, carrots, and celery into large chunks. Crush the garlic cloves but keep them whole.

    Combine Ingredients

    In a large stockpot, combine the roasted bones, chopped vegetables, tomato paste, red wine, and water. Add thyme, bay leaves, and black peppercorns.

    Simmer the Stock

    Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to low and let it simmer for at least 4 hours, skimming off any foam that rises to the top.

    Strain the Stock

    After simmering, strain the liquid through a fine-mesh sieve into a clean pot. Discard the solids.

    Reduce the Stock

    Return the strained liquid to the heat and let it simmer until it reduces by half, which should take about 1-2 hours.

    Cool and Store

    Once reduced, let the demi-glace cool. Store in airtight containers in the refrigerator for up to a week or freeze for longer storage.
