Prepare the Bone Marrow
Preheat your oven to 400°F (200°C). Place the bone marrow in a baking dish and roast for about 15-20 minutes until the marrow is soft and bubbling. Remove from the oven and let cool slightly, then scoop out the marrow into a bowl.

Combine Ingredients
In a mixing bowl, combine the roasted bone marrow, softened butter, minced garlic, chopped parsley, thyme leaves, lemon zest, sea salt, and black pepper. Mix well until all ingredients are thoroughly combined.

Shape the Butter
Transfer the mixture onto a sheet of parchment paper. Roll into a log shape, twisting the ends of the parchment to secure it. Refrigerate until firm, about 1 hour.

Once firm, slice the compound butter into rounds and serve on grilled meats, vegetables, or crusty bread.
