Preheat oven to 500°F (260°C) with a pizza stone or an inverted rimmed baking sheet on the middle rack for at least 30 minutes. If using a home oven that reaches lower temps, preheat to the highest temperature available (475–500°F).

Dust a work surface with the all-purpose flour. Lightly press and stretch the pizza dough into a 12-inch round (or 10x14 inch rectangle for a sub-style shape), keeping a slightly thicker edge for the crust. If dough resists, let it rest 5–10 minutes and try again.

Brush the dough lightly with 1 tablespoon olive oil, focusing on the outer rim to help brown the crust and prevent sogginess.
Sauce

In a small bowl, combine the pizza sauce with the dried oregano and crushed red pepper flakes. Adjust the red pepper to your heat preference.

Spread the sauce evenly over the prepared dough, leaving a 1/2-inch border for the crust. Use about 3 tablespoons of sauce, more or less depending on desired sauciness.

Evenly sprinkle 1 1/2 cups shredded mozzarella over the sauced dough, making a uniform layer but leaving the edge clear for the crust.

Lightly sprinkle the 2 tablespoons grated provolone or Parmesan over the mozzarella if using, for added flavor.

Distribute the sliced ham in small pieces across the cheese to ensure even coverage.

Layer the spicy salami, pepperoni, and capicola across the pizza. Arrange slices slightly overlapping but avoid piling too thickly so heat reaches all pieces and crust bakes evenly. Use all the listed meat portions (approx. 9 oz total) evenly spaced.

Scatter the thinly sliced green pepper and onion over the meats so they roast while the pizza bakes. If using banana peppers or pepperoncini, add them sparingly now.

Season the assembled pizza with a few grinds of black pepper and a light pinch of red pepper flakes if more heat is desired.

Slide the pizza onto the preheated pizza stone or inverted baking sheet. Bake 8–12 minutes at 500°F (260°C), or 10–15 minutes at 475°F, until the crust is golden and blistered in spots and the cheese is melted and bubbling. Rotate halfway through baking for even color.
