Pepsi (homemade cola-style soda)

Method

Pepsi (homemade cola-style soda)

1

Make cola syrup base

In a small saucepan combine the dark brown sugar and white granulated sugar with 2 tablespoons of water. Heat over low-medium heat, stirring constantly until the sugars dissolve and you have a smooth syrup (about 2–3 minutes). Remove from heat.

2

Add flavorings

Stir the caramel syrup (or burnt sugar syrup) into the warm sugar syrup until incorporated. Add the lemon juice, lime juice, and vanilla extract and mix. If using caffeine, carefully add it now, dissolving completely (use extreme caution with dosing). Allow the syrup to cool to room temperature (about 10 minutes).

3

Assemble the drink

Fill a serving glass with ice cubes. Pour the cooled cola syrup into the glass (about 1–2 tablespoons of syrup per 8 ounces depending on desired sweetness/strength). For the recipe proportions above, add approximately 2 tablespoons of the prepared syrup to 3 cups (24 fl oz) of chilled carbonated water and gently stir to combine. Taste and adjust: add more syrup for sweeter/stronger, or more carbonated water for lighter.

4

Serve

Serve immediately over ice. If desired, garnish with a thin lemon or lime wheel. Keep leftover syrup refrigerated in a sealed container for up to 1 week; stir before using.
