Soak the Potato Slices
Place the sliced potatoes in a large bowl of cold water to soak for at least 30 minutes. This helps to remove excess starch and prevents the chips from sticking together during frying.

Heat the Oil
In a large, heavy-bottomed pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test if the oil is ready by dropping in a slice of potato; if it sizzles immediately, it's good to go.

Fry the Potato Slices
Carefully remove the potato slices from the water and pat them dry with paper towels to remove excess moisture. Fry them in batches (do not overcrowd the pot) for about 3-4 minutes or until they are golden brown and crispy.

Drain and Season
Using a slotted spoon, remove the fried chips from the oil and place them on a paper towel-lined plate to drain excess oil. While the chips are still hot, sprinkle with salt and black pepper to taste.
