Method

Prepare the Coleslaw

    Mix the Ingredients

    In a large mixing bowl, combine the shredded green cabbage and grated carrot.

    Add Dressing

    In a separate bowl, whisk together vegan mayo, apple cider vinegar, maple syrup, salt, and black pepper until smooth. Pour the dressing over the cabbage and carrot mixture.

    Toss Together

    Toss the coleslaw mixture until everything is well coated in the dressing. Set aside to allow flavors to meld for at least 10 minutes.

Assemble the Sandwich

    Layer the Ingredients

    Take two slices of whole grain sandwich bread. Spread 1 tablespoon of vegan mayo on one side of each slice.

    Add Plant-Based Turkey

    On top of the mayo, layer 4 oz of plant-based turkey slices evenly on each slice of bread.

    Add Provolone Cheese

    Place 2 slices of plant-based provolone cheese on top of the turkey on each slice of bread.

    Spoon the prepared coleslaw generously over the cheese on one slice of bread.

    On the other slice of bread, spread 1 tablespoon of vegan Russian dressing.

    Complete the Sandwich

    Carefully place the slice with coleslaw on top of the slice with Russian dressing, mayo side down. Press gently to hold together.

    Cut and Serve

    Slice the sandwich in half and serve immediately with extra coleslaw on the side if desired.
