Turkey Preparation

    Prepare the Turkey

    Preheat your oven to 325°F (160°C). Rinse the whole turkey under cold water and pat dry with paper towels.

    Season the Turkey

    Rub the turkey with olive oil, then season generously with salt, black pepper, garlic powder, onion powder, thyme, and rosemary, ensuring to coat both the outside and inside of the cavity.

    Roast the Turkey

    Place the turkey on a roasting pan and roast in the preheated oven for approximately 13-15 minutes per pound, or until the internal temperature reaches 165°F (74°C). Baste the turkey every hour with the pan juices.

    Rest and Pull the Turkey

    Once cooked, remove the turkey from the oven and let it rest for at least 30 minutes. After resting, use your hands or a fork to pull the meat apart into chunks.

    Prepare the Vegetables

    Wash and slice the tomato and onion thinly. Set aside.

    Assemble the Sandwich

    On a slice of sourdough bread, spread a tablespoon of mayonnaise, layer with fresh lettuce, pulled turkey, provolone cheese, sliced tomato, and onion. Top with another slice of sourdough.
