    Prepare the Steak

    Season the flank steak with salt and pepper. In a skillet over medium-high heat, add 1 tablespoon of olive oil. Once hot, add the flank steak and sear for about 4-5 minutes on each side, or until cooked to your desired doneness. Remove from heat and let rest for 5 minutes before slicing thinly against the grain.

    Sauté the Vegetables

    In the same skillet, add the remaining tablespoon of olive oil. Add sliced onions and cook until they become translucent, about 3-4 minutes. Next, add the sliced mushrooms and hot or sweet peppers, cooking until softened, about another 5 minutes. Season with salt and pepper to taste.

Assembly

    Assemble the Cheesesteak

    Preheat your oven to 350°F (175°C). Take the sub rolls and slice them open, leaving one side intact. Layer the sliced steak evenly inside each roll, followed by the sautéed vegetables. Top with 2 slices of white American cheese per sandwich.

    Melt the Cheese

    Place the assembled cheesesteaks on a baking sheet and put them in the preheated oven. Bake for about 5-7 minutes, or until the cheese has melted and the bread is slightly toasted.
