Grill the chicken breast until fully cooked, about 6-7 minutes per side. Ensure the internal temperature reaches 165°F (75°C). Once cooked, slice the chicken into thin strips.

In a large skillet, heat the olive oil over medium heat. Add the sliced onions and mushrooms, and sauté for about 5 minutes until they are tender. Add the sweet and hot peppers and continue to sauté for an additional 2-3 minutes.

Melt the Cheese
Once everything is combined and heated, sprinkle the provolone cheese over the chicken and vegetable mixture. Cover the skillet with a lid for 2-3 minutes to allow the cheese to melt.

While the cheese is melting, slice the hoagie rolls down the middle, being careful not to cut all the way through. You want them to open like a book.
