    Cube the Bread

    Cut the bread into 1-inch cubes and let them sit out to dry for a few hours or overnight.

    Chop the Vegetables

    Dice the onion, celery, and garlic into small pieces. Chop the fresh parsley, thyme, and sage.

Cooking

    Sauté the Aromatics

    In a large skillet, heat 2 tablespoons of oil over medium heat. Add the diced onion and celery, and sauté for about 5 minutes until soft. Add the minced garlic and sauté for another 2 minutes until fragrant.

    Combine Ingredients

    In a large mixing bowl, combine the cubed bread, sautéed vegetables, parsley, thyme, sage, salt, pepper, and rosemary. Mix well.

    Add Broth and Eggs

    Pour the vegetable broth over the bread mixture and add the beaten eggs. Stir until everything is well combined and the bread is moistened.

    Bake the Stuffing

    Preheat the oven to 350°F (175°C). Transfer the stuffing mixture to a greased baking dish. Cover with foil and bake for 30 minutes. Remove the foil and bake for an additional 15-20 minutes until the top is golden brown.
