Preheat your oven to 325°F (163°C). Place the turkey breast in a roasting pan and season as desired. Roast for approximately 1.5 to 2 hours or until the internal temperature reaches 165°F (74°C). Once cooked, let it rest for 20 minutes before slicing.

In a large mixing bowl, combine the mixed greens. Wash thoroughly and dry using a salad spinner or paper towels.

While the turkey is roasting, dice the tomatoes and set aside. If using frozen corn, cook according to package instructions and drain. Rinse and drain the black beans.

On a large serving tray, start by placing the mixed greens as the base. Layer the sliced roasted turkey on top.
