Method

Platanos Fritos

Prepare Plantains

Peel the plantains and cut them into 1-inch thick slices.

Heat Oil

Heat vegetable oil in a skillet over medium heat.

Fry Plantains

Fry the plantain slices for about 3-4 minutes on each side until golden brown.

Drain and Season

Remove from oil, place on paper towels, and sprinkle with salt.

Coconut Rice & Beans

Rinse Rice

Rinse the rice under cold water until the water runs clear.

Combine Ingredients

In a pot, combine rinsed rice, coconut milk, black beans, minced garlic, salt, and pepper.

Cook Rice

Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes until rice is cooked.

Fluff Rice

Fluff with a fork before serving.

Tostones

Peel the plantains and slice them into 1-inch thick rounds.

Peel the yucca and cut into fry-sized pieces.
