Cook the Proteins

In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the diced chicken breast and pork. Cook until browned and fully cooked, about 5-7 minutes. Remove from the skillet and set aside.

Cook the Shrimp

In the same skillet, add another tablespoon of vegetable oil. Add the shrimp and cook until they turn pink, about 3-4 minutes. Remove and set aside with the chicken and pork.

Scramble the Eggs

Add the remaining tablespoon of vegetable oil to the skillet. Pour in the beaten eggs and scramble until fully cooked. Remove and set aside.

Sauté Vegetables

In the same skillet, add a splash of vegetable oil if needed. Sauté the minced garlic, ginger, and diced red bell pepper for about 2-3 minutes until fragrant and the bell pepper is tender.

Combine Ingredients

Add the cooked rice to the skillet, breaking up any clumps. Stir in the cooked proteins (chicken, pork, and shrimp), scrambled eggs, and chopped green onions.

Season the Dish

Pour the soy sauce over the rice mixture. Season with salt and black pepper. Stir everything together and cook for an additional 5 minutes, allowing the flavors to meld.

Remove the skillet from the heat. Serve the Chaufa Peruana hot, garnished with additional green onions if desired.
