Marinate the Tofu

Press the firm tofu to remove excess moisture. Cut the tofu into slices or cubes. In a bowl, mix soy sauce, maple syrup, sesame oil, yuzu juice, garlic powder, smoked paprika, and black pepper. Add the tofu pieces to the marinade and let them sit for at least 30 minutes, preferably in the refrigerator for a few hours.

Prepare the Smoker

Prepare your smoker according to the manufacturer's instructions. If using a stovetop smoker, add wood chips and preheat it over medium heat.

Smoke the Tofu

Place the marinated tofu in the smoker. Smoke for about 20-25 minutes, flipping halfway through, until the tofu is infused with a smoky flavor and has a slightly firm texture.

Serve

Remove the smoked tofu from the smoker and let it cool slightly. Serve with a drizzle of house special sweet and savory sauce, garnished with additional yuzu zest or sesame seeds if desired.
