Prepare the Pork Belly
Preheat your oven to 160°C (320°F). Score the skin of the pork belly in a crosshatch pattern, being careful not to cut into the meat. Season with salt.
Make the Sauce
In a bowl, mix together soy sauce, hoisin sauce, brown sugar, rice vinegar, sesame oil, minced garlic, and grated ginger.
Roast the Pork Belly
Place the pork belly in a roasting pan and pour the sauce over it. Cover with foil and roast in the oven for about 2.5 to 3 hours, until tender.
Crisp the Skin
Remove the foil and increase the oven temperature to 220°C (430°F). Roast for an additional 20-30 minutes, or until the skin is crispy.
Prepare the Buns
While the pork belly is roasting, steam the white buns according to package instructions until fluffy.
Assemble the Buns
Once the pork belly is cooked, let it rest for 10 minutes before slicing it into bite-sized pieces. Place a piece of pork belly inside each bun and top with sliced green onions.
