Preparation

    Preheat the Oven

    Preheat your oven to 425°F (220°C) and butter four ramekins. Dust them lightly with cocoa powder, tapping out the excess.

    Melt Chocolate and Butter

    In a medium heatproof bowl, combine the unsalted butter and bittersweet chocolate. Set the bowl over a saucepan of simmering water (double boiler method) and stir until melted and smooth. Remove from heat and let cool slightly.

    Mix Sugar and Eggs

    In a separate bowl, whisk together the granulated sugar, whole eggs, egg yolks, vanilla extract, and a pinch of salt until the mixture is pale and slightly thickened.

    Combine Mixtures

    Gradually stir the melted chocolate mixture into the egg and sugar mixture until just combined.

    Add Flour

    Sift the all-purpose flour over the batter and gently fold it in using a spatula until no flour streaks remain.

Baking

    Fill Ramekins

    Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.

    Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is still soft.

    Cool and Serve

    Remove from the oven and let the cakes sit for 1 minute. Invert each ramekin onto a plate, gently tapping to release the cake. Serve immediately with a scoop of vanilla ice cream.
