Ahi Tuna Preparation

    Season the Tuna

    In a small bowl, mix the black pepper, white pepper, and Szechuan peppercorns. Rub the spice mixture onto the Ahi tuna steaks evenly. Let them sit for about 10 minutes to absorb the flavors.

    Sear the Tuna

    Heat olive oil in a skillet over high heat. Once hot, add the Ahi tuna steaks and sear for about 1-2 minutes on each side for rare doneness. Remove from heat and let rest before slicing.

    Serve the Caviar

    Place the tobiko caviar in a small bowl and set aside for serving alongside the tuna.

Enoki Mushrooms Preparation

    Sauté the Mushrooms

    In a skillet, melt butter over medium heat. Add minced garlic and sauté until fragrant. Add the enoki mushrooms and cook for about 3-4 minutes until tender. Season with salt and pepper to taste.

Lobster Cognac Bisque Preparation

    Prepare the Soup Base

    In a large pot, sauté chopped onion, carrot, and celery until softened. Add the lobster meat and cook for another 2-3 minutes.

    Add Liquids and Simmer

    Pour in the cognac and let it cook for 1-2 minutes to reduce. Add the fish stock, bay leaf, and salt. Bring to a simmer and cook for 20 minutes.

    Finish the Bisque

    Remove the bay leaf, then blend the mixture until smooth. Stir in the heavy cream and season with black pepper to taste. Heat gently before serving.
