Preparing Sushi Rice

Rinse the Sushi Rice
Place the sushi rice in a fine-mesh strainer and rinse under cold water until the water runs clear. This removes excess starch.

Cook the Rice
In a medium saucepan, combine the rinsed sushi rice and 2.5 cups of water. Bring to a boil, then reduce the heat to low, cover, and simmer for 20 minutes. Remove from heat and let it sit covered for an additional 10 minutes.

Season the Rice
In a small bowl, mix together rice vinegar, sugar, and salt. Heat gently until the sugar dissolves. Once the rice has rested, transfer it to a large bowl and gently fold in the vinegar mixture using a wooden spatula. Allow it to cool to room temperature.

Assemble the Sushi Rolls
Place a sheet of nori on a bamboo sushi mat, shiny side down. Wet your hands with water to prevent sticking and take about a handful of sushi rice. Spread it evenly over the nori, leaving about 1 inch at the top edge.

Roll the Sushi
Using the bamboo mat, carefully roll the sushi away from you, pressing gently to ensure a tight roll. Wet the top edge of the nori with a little water to seal the roll. Repeat with remaining ingredients.

Slice the Rolls
Using a sharp knife, slice each roll into 6-8 pieces. Wipe the knife with a damp cloth between cuts for clean slices.

Arrange the Platter
Arrange the sushi pieces on a platter. Serve with soy sauce, wasabi, and pickled ginger on the side.
