Sushi Preparation

Cook the Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. Cook the rice according to the package instructions (typically using a rice cooker or stovetop method) until tender. Once cooked, let it cool slightly.

Season the Rice
In a small bowl, mix together the rice vinegar, sugar, and salt until dissolved. Pour this mixture over the warm rice and gently fold it in, being careful not to mash the rice.

Assemble the Sushi Roll
Place a nori sheet on a bamboo sushi mat, shiny side down. Wet your hands to prevent sticking, then take a handful of sushi rice and evenly spread it over the nori, leaving a 1-inch border at the top. Place a few strips of cucumber, avocado, and cooked shrimp in a line across the center of the rice. Carefully roll the sushi away from you, applying gentle pressure to form a tight roll.

Slice the Roll
Using a sharp knife, slice the roll into 6-8 pieces. Repeat with remaining ingredients.

Wash and dry the mixed greens, cherry tomatoes, and cucumber. Halve the cherry tomatoes and slice the cucumber into thin rounds.

In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and black pepper until well combined.

In a large bowl, combine the mixed greens, cherry tomatoes, and cucumber. Drizzle the dressing over the salad and toss gently to combine.
