Method
Preparing the Rice
- 1
Rinse the Rice
Place the glutinous rice in a bowl and rinse under cold water until the water runs clear. This removes excess starch.
- 2
Soak the Rice
Cover the rinsed rice with fresh water and soak for at least 4 hours, or overnight for best results.
- 3
Steam the Rice
Drain the soaked rice and place it in a steamer basket lined with cheesecloth. Steam over boiling water for about 30-40 minutes until tender.
Making the Coconut Sauce
- 4
Combine Ingredients
In a saucepan, combine the coconut milk, sugar, and salt. Stir over medium heat until the sugar dissolves completely.
- 5
Simmer the Sauce
Bring the mixture to a gentle simmer and cook for about 5 minutes. Remove from heat and set aside.
- 6
Mix with Rice
Once the rice is cooked, transfer it to a bowl and pour 3/4 of the coconut sauce over it. Stir gently to combine and let it sit for about 10 minutes to absorb the flavor.
Preparing the Mango
- 7
Peel and Slice
Peel the ripe mangoes and slice them into thin wedges or strips.
Serving
- 8
Plate the Dish
To serve, place a portion of the sticky rice on a plate, top with mango slices, and drizzle with the remaining coconut sauce. Optionally, sprinkle with sesame seeds or mung beans.
