Prepare Sushi Rice

Cook the Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. Cook the rice according to package instructions, typically using a rice cooker or stovetop with the appropriate water-to-rice ratio.

Season the Rice
Once the rice is cooked, transfer it to a bowl and gently fold in rice vinegar, sugar, and salt. Allow it to cool to room temperature.

Slice the Tuna
Cut the yellowfin tuna into small cubes. In a bowl, combine the tuna with Sriracha sauce and mix well to create the spicy tuna filling.

Prepare Avocado
Cut the avocado in half, remove the pit, and slice it into thin strips.

Prepare Cream Cheese
Soften the cream cheese at room temperature for easier spreading.
Assemble the Rolls

Lay Out Nori
Place a sheet of nori on a bamboo sushi mat, shiny side down.

Spread the Rice
Wet your hands and grab a handful of sushi rice. Spread it evenly over the nori, leaving about 1 inch at the top edge.

In the center of the rice, place a line of the spicy tuna mixture, followed by a few avocado slices and a thin layer of cream cheese.

Roll the Sushi
Using the bamboo mat, carefully roll the sushi away from you, applying gentle pressure to form a tight roll. Seal the edge with a little water.
Fry the Rolls

Using a sharp knife, slice the rolls into 6-8 pieces. Wet the knife between cuts to prevent sticking.

Coat in Panko
Dredge the roll pieces in panko breadcrumbs to coat them evenly.

Fry the Rolls
Heat vegetable oil in a frying pan over medium heat. Carefully add the coated rolls and fry until golden brown on all sides, about 2-3 minutes.

Drain Excess Oil
Remove the fried rolls from the pan and place them on paper towels to drain excess oil.

Sprinkle sesame seeds over the fried rolls and serve with soy sauce on the side.
