Prepare the Filling
In a large bowl, combine the ground pork, shredded cabbage, grated carrot, chopped green onions, minced garlic, grated ginger, soy sauce, and sesame oil. Mix until well combined.

Assemble the Potstickers
Take a wonton wrapper and place a tablespoon of the filling in the center. Moisten the edges of the wrapper with water, fold it in half to create a semi-circle, and pinch to seal. Repeat with remaining filling and wrappers.

Cook the Potstickers
Heat vegetable oil in a large skillet over medium heat. Add the potstickers, flat side down, and cook until the bottoms are golden brown, about 3-4 minutes. Add a splash of water to the skillet and cover immediately to steam the potstickers for 5 minutes. Uncover and let cook for an additional 2 minutes until crispy.

Prepare the Salad
In a bowl, combine the thinly sliced cucumber, rice vinegar, sugar, and salt. Toss well and let marinate for at least 10 minutes. Before serving, sprinkle with toasted sesame seeds.

Make the Sauce
In a small saucepan over medium heat, melt the butter. Add soy sauce, honey, minced garlic, and grated ginger. Stir until well combined and heated through, about 3-4 minutes.
