Method
Mousse Preparation
- 1
Melt Chocolate and Butter
In a heatproof bowl, combine the dark chocolate and unsalted butter. Place the bowl over a pot of simmering water (double boiler method) and stir until melted and smooth. Remove from heat and let cool slightly.
- 2
Whisk Eggs and Sugar
In a separate bowl, whisk the large eggs with the granulated sugar until the mixture becomes pale and fluffy, about 5 minutes.
- 3
Combine Mixtures
Gently fold the melted chocolate mixture into the egg mixture using a rubber spatula. Add the vanilla extract and a pinch of salt, and fold until just combined.
- 4
Chill the Mousse
Divide the mousse mixture into individual serving cups or bowls. Cover and refrigerate for at least 2 hours, or until set.
Whipped Cream Preparation
- 5
Whip the Cream
In a mixing bowl, combine the heavy cream, powdered sugar, and vanilla extract. Using an electric mixer, whip on medium speed until soft peaks form, about 3-5 minutes.
- 6
Serve
Once the mousse has set, remove from the refrigerator. Top each mousse with a dollop of whipped cream before serving.
