Prepare Lobster
If using live lobsters, cook briefly (3–4 minutes) in boiling salted water until shells turn bright red, then transfer to an ice bath. Remove meat from tails and knuckles, reserving shells. Pat meat dry and chop into 1/2-inch pieces; measure 1 cup. Reserve any cooking juices from shells.

Melt 6 tbs unsalted butter in a small sauté pan over low heat until just melted and warm (do not boil). Add chopped lobster meat, season with 1 tsp sea salt and 1/2 tsp black pepper. Poach gently in the warm butter for 2–3 minutes until opaque and fragrant. Remove lobster with a slotted spoon and set aside, keeping warm in the butter. Reserve the butter and any juices for finishing the bisque.

Reserve lobster shells for the bisque base. Roughly crush shells into pieces so they release flavor more readily during simmering.
Bisque Base

In a large saucepan or heavy skillet, melt 3 tbs unsalted butter over medium heat. Add the crushed lobster shells and cook, stirring frequently, until shells become fragrant and start to brown slightly, about 6–8 minutes. This browning adds depth; do not burn.

Stir in 2 tbs tomato paste and cook 1–2 minutes to remove raw flavor and coat vegetables and shells.

Carefully add 4 tbs brandy or cognac and, if desired, flambé to burn off alcohol (tilt pan carefully and light with a long match) or cook until most alcohol aroma dissipates, about 1 minute. Add 3/4 cup dry white wine and simmer until reduced by half, about 3–4 minutes.

Add 3 cups fish stock (or chicken stock), 2 cups water, 1 bay leaf, 2 thyme sprigs, and 6 peppercorns. Bring to a gentle simmer, then reduce heat to low and simmer, partially covered, for 30–40 minutes to extract flavor from the shells.

After simmering, strain the stock through a fine-mesh sieve into a clean pot or bowl. Press on the solids to extract as much liquid and flavor as possible, then discard solids. Return the strained liquid to the saucepan and bring to a gentle simmer.

Optional: For an extra-smooth, concentrated bisque, transfer the strained liquid and any small soft bits to a blender and pulse 30–60 seconds, then strain again through a fine sieve or chinois. Return to the pot.
Cream & Finishing

Reduce heat to low. Stir in 1 cup heavy cream and 1/2 cup whole milk to the strained lobster stock. Heat gently—do not boil once cream is added—to avoid breaking the cream. Simmer gently for 6–8 minutes to thicken slightly and meld flavors.

Taste and adjust seasoning with salt to taste and 1 tsp fresh lemon juice to brighten the soup. Add a pinch of paprika or cayenne if you want a touch of heat; stir to combine.

Add the poached lobster meat back into the bisque to warm through for 1–2 minutes. Do not overcook the lobster; it should remain tender.
