    Chill and check crab

    If crab meat is refrigerated, drain any excess liquid by gently placing the crab in a fine mesh sieve and refrigerating over a bowl for 10–15 minutes. Pick through the crab to remove any bits of shell or cartilage. Keep crab cold until assembly.

    Place 1 cup of ice or crushed ice into a shallow bowl and set the crab meat on top for 2–3 minutes just before serving to give it a brief chill, then remove the crab and pat lightly with paper towel to remove surface moisture.

Cocktail Sauce

    Make the sauce

    In a small bowl, combine 1/2 cup ketchup, 2 tsp prepared horseradish, 1 tsp Worcestershire sauce, 1 tbsp fresh lemon juice, 1 tsp hot sauce, 1/4 tsp smoked paprika, 1/4 tsp salt, and 1/8 tsp black pepper. Whisk until smooth and taste; adjust heat or acidity by adding more horseradish, hot sauce, or lemon juice in 1/4-tsp increments.

    Chill the sauce in the refrigerator for at least 10 minutes to let flavors meld. Stir again before plating.

    Prepare serving vessels

    If using cocktail glasses, place a small amount (about 2 tbsp) of crushed ice or ice chips in the bottom of each glass to keep the crab cold without diluting it.
