Prepare the Chips

Cut the Potatoes
Wash and peel the russet potatoes. Cut them into thick strips to form hand-cut chips.

Dry the Chips
Drain the soaked potatoes and pat them dry with a clean kitchen towel to remove any moisture.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Fry the Chips
Carefully add the dried chips to the hot oil in batches, frying them until golden brown and crispy, about 5-7 minutes per batch.

Drain and Season
Remove the fried chips with a slotted spoon and place them on paper towels to drain excess oil. Sprinkle with salt to taste.

Rub the ribeye steaks with olive oil, salt, and black pepper on both sides.

Cook the Steak
Place the seasoned steaks in the hot pan and cook for 4-6 minutes on each side for medium-rare, depending on thickness.

Add Rosemary
In the last 2 minutes of cooking, add the sprig of fresh rosemary to the pan for added flavor.

Remove the steaks from the pan and let them rest for 5-10 minutes before slicing.
