Cook Pasta

    Boil Water

    In a large pot, bring water to a boil over high heat. Add 1 tsp of salt.

    Cook Pasta

    Add 8 cups of pasta to the boiling water. Cook according to package instructions until al dente, usually about 8-10 minutes.

    Drain and Set Aside

    Once cooked, drain the pasta and set aside, reserving a cup of pasta water for later use.

Prepare Vegetables

    Sauté Garlic

    In a large skillet, heat 4 tablespoons of olive oil over medium heat. Add 3 minced garlic cloves and sauté for about 1 minute until fragrant.

    Add Vegetables

    Add zucchini, bell pepper, and carrot to the skillet. Sauté for about 5-7 minutes until they begin to soften.

    Add Spinach and Tomatoes

    Stir in the fresh spinach and cherry tomatoes. Cook for an additional 2-3 minutes until the spinach is wilted.

Combine and Serve

    Mix Pasta and Vegetables

    Add the drained pasta to the skillet with the vegetables. Toss to combine all ingredients.

    Adjust Consistency

    If the pasta seems dry, add a little reserved pasta water until desired consistency is reached.

    Season and Serve

    Season with black pepper and sprinkle grated Parmesan cheese on top before serving. Serve immediately.
