Marinating Chicken

Prepare the Marinade
In a mixing bowl, whisk together olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper until well combined.

Marinate Chicken
Place the chicken breasts in a resealable plastic bag or shallow dish and pour the marinade over them. Seal the bag or cover the dish, then refrigerate for at least 30 minutes, preferably 2 hours for better flavor.

Prepare Vegetables
While the chicken is marinating, wash and slice the bell peppers, zucchini, and red onion. Set aside.
Grilling

Preheat the Grill
Preheat your grill to medium-high heat (about 375°F to 400°F).

Grill the Chicken
Remove the chicken breasts from the marinade and discard the remaining marinade. Grill the chicken for about 6-7 minutes per side, or until the internal temperature reaches 165°F.

Serve
Once the chicken and vegetables are grilled, remove them from the grill and let the chicken rest for a few minutes. Serve the grilled chicken with the seasonal vegetables on the side.
